            120g red lentils
            1 onion, chopped
            1 litre water
            1 stock cube (gluten free / vegetarian if required)
            Good handful of fresh coriander

        • Carrot, Coriander and Red Lentil Soup

          1. Put all ingredients, except the coriander, in a pan and simmer for 45 mins

          2. Add coriander and cook for a couple of minutes

          3. Blend until smooth and serve.
